If you want to serve a memorable feast at your wedding, there’s no need to splurge on a traditional sit-down affair—consider hiring one of Portland’s hottest food carts to pull up to your reception. Rebecca Kaufman and Bob Ward wanted to celebrate everything they love about the Rose City, including the spontaneous fun of the food cart dining scene. So they created a “food court” with several carts at their October 10, 2009, outdoor reception in the West Hills, including the hugely popular roaming Korean BBQ taco truck Koi Fusion. “To this day, guests will bring up that the food was the best that they’ve had at a wedding,” Rebecca raves. Indeed, Koi and other mobile kitchens are popping all over Portland—and gaining national press in the process. Koi will deliver just the food—tacos topped with fresh sprouts, burritos made with kimchi fried rice—or park their truck for guests to order from the window for just a $250/hour minimum (two hour minimum, plus $1/mile).
